Fancy Lamb Chops?



3 lamb chops per person

1 tbsp olive oil

2 tbsp fresh orange juice

2 tbps chopped mint leaves

3 minced garlic cloves

½ tsp salt and pepper

For the Pesto:

15g mint leaves

5g fresh basil

30g macadamia nuts

1 garlic clove

60ml olive oil

30ml fresh lemon juice

15ml fresh orange juice

¼ tsp salt and pepper

Preheat the grill to medium high, in a small bowl, combine the olive oil, orange juice, mint, garlic, salt and pepper. Rub this into the chops and let it rest for 30 mins at room temperature.

In a food processor place all the pesto ingredients and pulse until well combined.

Grill the lamb chops for 3-4 mins on each side if you like them medium – grill for longer if you prefer them well done.

Serve drizzled with the mint pesto, greek salad and homemade humous.
